Ingredients

Ingredients, candied ginger, roasted almonds, gingerbread cookies, marshmallows, milk chocolate, salted pretzels, red and green candy.

Milk chocolate: use a good mid-range milk chocolate for a smooth, creamy result. Dark chocolate works well if you prefer a less sweet finish.

Gingerbread cookies: they add a seasonal spice and warmth. Homemade gingerbread lends extra depth, but store-bought cookies keep things quick and easy.

Candied ginger (uncrystallised): provides a bright, slightly spicy contrast to the sweet elements. Chop it small—it’s potent in large pieces.

Red and green chocolate candy: adds a festive touch. Use M&Ms or any similar candy in your preferred colours.

Marshmallows: medium-sized are ideal for texture balance; white marshmallows give a clean look but coloured ones are fine too.

Roasted almonds: for crunch; substitute peanuts, pecans or macadamias if you prefer.

Salted pretzels: add a crunchy, salty counterpoint to the sweetness and help balance the flavour.

How to make Gingerbread Rocky Road

See the recipe card below for ingredient amounts and full instructions.

Line a baking tray or tin with foil. Break the gingerbread cookies into roughly bite-sized pieces, chop the candied ginger finely, and break the pretzels into pieces. Add the gingerbread pieces, marshmallows, candied ginger, pretzels and roasted almonds to a large bowl and toss to combine.

Process shots, lining a baking tray with foil, chopping up the chocolate to melt it, chopping up the candied ginger, adding the dry ingredients to a bowl to mix.

Chop the chocolate and place it in a microwave-safe bowl. Melt in 30-second bursts, stirring between each interval until the chocolate is smooth. Alternatively, use a bain-marie to melt the chocolate gently.

Process shots, adding melted chocolate to dry ingredients, tipping onto lined baking try and sprinkling with red and green candy.

Work quickly: pour the warm melted chocolate over the mixed dry ingredients and stir until everything is well coated. Transfer the mixture onto the lined tray and press down evenly. Scatter the red and green chocolate candies on top, then leave to set completely at room temperature.

Hot tip: chocolate-coated candies like M&Ms can fade if left in the fridge too long. If your kitchen is warm, chill only briefly—no more than an hour—to set the chocolate, then return the tray to a cool spot to finish setting.

When the chocolate is fully set and firm, use a large sharp knife to cut the rocky road into generous pieces.

How to serve

Cut up pieces of rocky road, with center slice turned up showing cut edge and red and green candy.
Serving gingerbread flavored Rocky Road

Serve the gingerbread rocky road on a plate for sharing, or pack pieces into clear cellophane bags tied with ribbon for lovely homemade gifts. It’s also perfectly acceptable to enjoy it straight from the container if you can’t wait.

How to store

Store the rocky road in an airtight container in a cool, dry place for up to a month. Over time the gingerbread may soften slightly, but it will keep well for several weeks if properly sealed.

Tips for success and frequently asked questions

Can I use store-bought gingerbread cookies instead of homemade ones?

Yes — store-bought gingerbread cookies work great and save time. Use homemade if you want a deeper, fresher ginger flavour.

I don’t like gingerbread—what can I use instead?

If you prefer something else, swap in any un-iced festive cookie such as chocolate or spiced biscuits. The recipe is forgiving and works well with different cookie types, though texture and flavour will vary.

My chocolate candies faded in the fridge—what can I do?

To avoid fading, set the rocky road at room temperature when possible. If the colours have already dulled and you can’t remake it, you can carefully touch up the candies with food colouring and a fine clean brush. It’s a temporary fix but can restore a festive look for serving or gifting.
