Magic Bars

These delicious squares use seven simple ingredients to deliver layers of flavor and texture. The straightforward assembly makes them easy to customize—try different chips, swap nuts, or use flaked coconut for a different bite.

Ingredients for Magic Bars:

  • Graham cracker crumbs – store-bought or homemade by pulsing crackers in a food processor or crushing them in a bag with a rolling pin.
  • Butter – melted butter binds the crust. Salted or unsalted will work; salted adds a touch of savory balance.
  • Sweetened condensed milk – the sweet, thick liquid that holds the layers together and caramelizes slightly during baking.
  • Coconut – shredded or flaked; unsweetened is fine since the condensed milk adds plenty of sweetness.
  • Butterscotch chips – add a rich, caramel-like note. You can substitute white chocolate or peanut butter chips if preferred.
  • Chocolate chips – semi-sweet or dark chocolate work best to balance sweetness.
  • Nuts – coarsely chopped pecans or walnuts are traditional for crunch and flavor.

Gently press the layers down with a spatula or your hands so they stay in place.

FAQs

Do I have to use parchment paper?

No, but parchment makes removing and slicing the bars much easier and helps protect the pan from scratches. If you don’t have parchment, use foil and grease it well so the bars release cleanly.

What is the difference between sweetened condensed milk and evaporated milk?

They are not interchangeable. Sweetened condensed milk is thick and very sweet because most water has been removed and sugar is added—its texture is close to caramel. Evaporated milk has had about half its water removed but contains no added sugar and has a consistency similar to half-and-half.

Tools used to make Magic Cookie Bars:

  • Parchment paper – helps lift the finished bars from the pan so you can slice them neatly.
  • Food processor – useful for turning graham crackers into fine crumbs quickly.
  • 8×8-inch pan – the standard size for these proportions; an aluminized steel pan or similar will work well.
