Happy New Year! As resolutions kick in, many of us look to eat a little healthier after the holidays. For me that means smoothies, salads and a few satisfying snacks. Snacks can be wholesome too — this mushroom spread is a great example. It’s low in fat, versatile and makes a tasty midday snack. Use it as a spread on toast, stir it into pasta, or spoon it over rice (highly recommended). Leftovers keep well in the refrigerator for a few days.
Not only is it delicious, it’s also quick and simple to prepare — I made this in about 10 minutes. This savory spread is a real winner.
This dish also carries a small lesson: don’t judge a dish by appearance. While it may not look fancy, the flavor is excellent. If serving to guests, garnish with spring onions, a sprinkle of ground chili, or another colorful topping to make it more visually appealing.

Ingredients
- 250 grams mushrooms
- 1 onion
- 3 cloves garlic
- 1/2 chilli pepper
- 1 tbsp soy sauce or tamari
- 4 tbsp non dairy milk
- 1/2 tbsp nutritional yeast
- 1/2 tsp smoked paprika powder (optional)
- 1 sprig thyme (optional)
- to taste salt + pepper
Instructions

Chop the mushrooms, onion and garlic. Sauté over medium heat until softened, about two minutes, then add the thyme and continue cooking for another three minutes.

Transfer the cooked mixture to a blender or food processor. If using a small blender, allow it to cool slightly before processing. Blend until smooth, adding less liquid for a thicker spread.
