Choose fresh, ripe, large strawberries and be sure they’re washed and thoroughly patted dry. You can leave the stems on for easier dipping and a prettier presentation, or hull them if you prefer. Larger berries work best because they hold the coatings nicely; avoid frozen berries since they release too much moisture and won’t hold up.

The Coatings

These strawberries are dipped in three layers to recreate the s’mores experience. First is the marshmallow layer: miniature marshmallows are melted until gooey and the berries are quickly dipped about three-quarters of the way into the marshmallow mixture. Work fast—the marshmallow sets quickly—then chill the berries briefly so the marshmallow layer firms up.

Next comes the chocolate. Melt dark chocolate melting wafers until silky smooth, dip the strawberries about two-thirds of the way, and let excess drip off. While the chocolate is still wet, sprinkle on buttery graham cracker crumbs to finish the s’mores flavor and add crunchy texture. Allow the chocolate to set before serving.

S’mores Dipped Strawberries

Ingredients

  • 8-10 large fresh strawberries, washed and patted dry
  • 3 cups miniature marshmallows
  • cups dark chocolate melting wafers such as Ghirardelli brand
  • 1/2 cup graham cracker crumbs

Instructions

  • Line a rimmed baking sheet with parchment paper and lightly grease it with cooking spray; set aside.
  • Place the miniature marshmallows in a medium microwave-safe bowl and microwave on HIGH for 30 seconds. Stir until the marshmallows are melted and gooey. Work quickly to dip each strawberry about three-quarters of the way into the marshmallow mixture. If the mixture begins to firm, microwave an additional 5 seconds to re-soften. Refrigerate the dipped strawberries for about 10 minutes to set the marshmallow layer.
  • Melt the dark chocolate coating according to package directions or until smooth. Dip each strawberry about two-thirds of the way into the melted chocolate and let excess drip off. Return the berries to the baking sheet and immediately sprinkle generously with graham cracker crumbs. Allow the chocolate to harden before serving.

Notes

These can be made in larger batches; for best results, melt marshmallows in smaller portions since the mixture sets quickly.
