Ingredients

Wet Ingredients

  • 1 teaspoon ground flaxseed
  • 1 Tablespoon water
  • 1/4 cup maple syrup
  • 1/3 cup refined coconut oil, just melted
  • 1 teaspoon alcohol-free vanilla
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts

Dry Ingredients

  • 1-1/2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup cassava flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon Himalayan sea salt

Instructions

  • Preheat the oven to 350ºF.
  • Combine the ground flaxseed and water in a large bowl to make a flax “egg.” Set aside while you prepare the dry ingredients.
  • Whisk the dry ingredients together in a separate medium bowl until evenly mixed.
  • Add the maple syrup, melted coconut oil, and vanilla to the flax mixture. Stir vigorously until combined, then add the raisins and walnuts and mix.
  • Fold the dry ingredients into the wet mixture until evenly incorporated.
  • Line a baking sheet with parchment paper.
  • Spoon a heaping tablespoon of batter, form it into a tight ball, place it on the sheet, and slightly flatten. Space cookies about 1 inch apart. Repeat until all batter is used.
  • Bake 18–20 minutes or until golden brown. Remove the parchment with cookies from the sheet to cool before serving.

Notes

Mix the raisins and nuts into the wet ingredients first. Adding them directly to the dry flour can leave flour stuck in the grooves of the dried fruit and nuts.

The dough is sticky because of the maple syrup. Washing your hands halfway through forming the cookies makes shaping easier.
