It’s the first day of Ice Cream Week! There’s a giveaway, and I’ll be sharing fun ice cream flavors all week long along with a few other bloggers. Today’s recipe is a family favorite — Unicorn Ice Cream.

I don’t own an ice cream maker, so this is a simple no‑churn recipe.

The recipe is incredibly easy: whipping cream, a can of sweetened condensed milk, and vanilla extract. That’s it.
Start by whipping the cream in an electric mixer on high. As it begins to thicken, slowly add the sweetened condensed milk. When the mixture forms soft peaks, stir in the vanilla and whip for another minute.

Unicorn Ice Cream is a swirl of pink, purple, green, and turquoise. Divide the whipped mixture evenly into four bowls, then tint each bowl with gel food coloring (gels give brighter, truer colors than liquid drops). Add a little at a time until you reach the shade you want.

Layer heaping spoonfuls of each color into a freezer-safe container, alternating and overlapping the colors to create a rainbow effect. I prefer airtight freezer containers to prevent freezer burn.

After filling the container, tap it gently on the counter to level the top; this also swirls the colors slightly for a pretty marbled look.

Cover and freeze for at least 8 hours, preferably overnight, until firm.

This ice cream is perfect for parties, birthdays, or any time you want a fun, colorful treat. It has a sweet creamy base with a hint of vanilla that kids love.

Unicorn Ice Cream
Ingredients
- 2 cups whipping cream
- 14 oz can sweetened condensed milk
- 1 teaspoon vanilla extract
- Blue, pink, purple, and green gel food coloring
Instructions
- In an electric mixer, whip the cream on high.
- Slowly pour in the sweetened condensed milk while mixing.
- When soft peaks form, add the vanilla.
- Continue whipping for another 1–2 minutes.
- Divide the mixture into four bowls.
- Tint each bowl with a different gel food coloring: pink, blue, green, and purple.
- Mix each color with a spoon and adjust until you reach the desired shades.
- Drop heaping spoonfuls of each color into a freezer container, overlapping to create layers.
- Tap the container on the counter to level the top and slightly swirl the colors.
- Cover and freeze for at least 8 hours, preferably overnight.
- Serve once completely frozen.
