Ingredients Mother’s Day Heart Cake

150 g butter
100 g sugar
2 packages vanilla sugar (total 0.6 oz)

2 eggs
50 ml milk
150 g all-purpose flour
75 g starch (cornstarch or potato starch)
1 tsp baking powder
1 banana
250 g strawberries
1 package red glaze (German-style) or a homemade red fruit glaze

Cooking Instructions Mother’s Day Heart Cake

1. Preheat the oven to 180 °C (about 360 °F). Grease a round baking pan about 26 cm (10 inches) in diameter.
2. In a mixing bowl, cream the butter and sugar together until light and fluffy. Add the vanilla sugar and eggs, mixing well between additions.
3. Stir in the milk. Sift the flour, starch and baking powder together, then fold into the wet ingredients until you have a smooth batter.
4. Pour the batter into the prepared pan and smooth the top. Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan, then transfer to a serving plate.

5. Prepare the fruit: slice the banana and wash the strawberries. Remove the green tops from the strawberries and pat them dry, then halve each strawberry.
6. When the cake has cooled, arrange the banana slices in the center to form a heart shape. Place the halved strawberries around the banana heart to complete the design.
7. Prepare the red glaze according to the package instructions and pour it over the fruit and cake to set a glossy finish. Alternatively, make a quick glaze by mixing red grape or berry juice with a little starch, heating until thickened, then cooling slightly before pouring over the cake.

Finish by piping or dolloping whipped cream around the edges if you like, or serve the cake as is for a lighter presentation.

Tips:

  • If you prefer, substitute the starch with more all-purpose flour, though the texture will be slightly different.
  • For a stronger vanilla flavor, use homemade vanilla sugar or scrape in the seeds from half a vanilla bean.
  • Any red berry—raspberries, cherries or a berry compote—can replace the strawberries for a different look and taste.
