- 1 Cup Buttermilk

- Green Food Coloring If Desired
For the Whipped Cream Topping
- 1 Pint Heavy Whipping Cream
- 2 Tablespoons White Chocolate Instant Pudding Mix

For the Shamrock Shake Cupcakes
- Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a large bowl, cream the softened butter and sugar until light and fluffy. Add buttermilk, then add eggs one at a time, mixing until just combined.
- Stir in vanilla extract, mint extract, baking powder, and salt.
- Gradually add the flours, stirring a little at a time until just combined. Do not overmix.
- Add green food coloring if you want a classic green color.
- Fill cupcake liners about ¾ full. Bake 15–20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before topping.
For the Whipped Cream Topping
- Chill a mixing bowl and whisk, then whip the heavy cream with the white chocolate instant pudding mix until stiff peaks form.
- Pipe or spread the whipped cream onto cooled cupcakes and top with maraschino cherries if desired.
