Equipment

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  • Combine the olive oil and lemon juice in a mixing bowl or mason jar and whisk until slightly emulsified.
  • Add the dried oregano, thyme, ground cumin, ground coriander, smoked paprika, onion powder, garlic powder, sea salt, and black pepper.
  • Whisk thoroughly until all ingredients are fully combined.
  • Use the marinade right away or store it refrigerated in a sealed jar for up to one week. If chilled, shake or whisk before using.
  • Marinating guidelines:
  • Vegetables: at least 30 minutes.
  • Chicken or pork: 1 to 4 hours.
  • Beef or tofu: up to 8 hours.
  • Always discard any marinade that has contacted raw meat.

Notes

  • Bring proteins to room temperature before cooking for more even searing.
  • Double the batch and freeze in portions for quick weeknight meals.
  • Turn this into a salad dressing by whisking in 1 teaspoon Dijon mustard.
  • Great on skewers for grilled kabobs.
  • Reserve a tablespoon to drizzle over the finished dish for extra flavor.
