This recipe was born from a small dinner drama: while sharing a quick pot pie with my three-year-old, he insisted there should be spinach. After a few minutes of protest, I decided to embrace the suggestion and create a version that combines sausage, spinach, tomatoes, and plenty of cheese. The result is a hybrid between pizza and pot pie that’s easy to make and sure to please both kids and adults.

Easy Sausage Pizza Pot Pie

A fun, family-friendly twist on pizza that’s simple to make.

Ingredients

  • 1 small onion, diced
  • 1 pound ground Italian sausage (turkey sausage works well)
  • 6 ounces fresh baby spinach
  • 14 ounces canned fire-roasted diced tomatoes with garlic, drained
  • 8 ounces fresh mozzarella, diced into 1/2″ cubes
  • 1 egg
  • 1/4 cup milk
  • 1/2 cup biscuit baking mix (use gluten-free mix if desired)
  • 1/4 teaspoon Italian seasoning
  • 1 tablespoon grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F. Spray a 9-inch deep-dish or a 12-inch shallow pie pan with cooking spray and set aside.
  2. Spray a 12-inch skillet with cooking spray and heat over medium-high. Add the diced onion and sausage; sauté, breaking up the meat, until the sausage is mostly cooked through.
  3. Reduce heat to medium. Stir in half the spinach and cook until wilted. Add the remaining spinach and the drained tomatoes, stirring gently until all the spinach is wilted.
  4. Drain the sausage and spinach mixture well, then transfer it to the prepared pie pan. Spread the cubed mozzarella evenly over the top and gently press the cheese into the meat.
  5. In a bowl, whisk together the egg, milk, biscuit mix, and Italian seasoning. Spread the dough over the sausage and cheese. Note: the amount of dough is enough to cover a 9-inch dish; if using a 12-inch pan and you want full coverage, double the egg, milk, and biscuit mix.
  6. Sprinkle the grated Parmesan over the top. Bake in the preheated oven for about 25 minutes, or until the top is golden brown and the cheese is melted. Let the pie rest for about 5 minutes before serving.
