Strawberry Rice Krispie Treats Recipe – Fresh Fruity Snack

I wanted to share these easy and adorable Strawberry Rice Krispie Treats. Valentine’s Day often brings mixed emotions — I’m not a fan of the commercial side, but I do love an excuse to tell the people I care about that I appreciate them. A handwritten note, a small sweet, or extra time together are always welcome. These treats are a simple, fun way to show some love.

Freeze-dried strawberries are a fantastic way to add natural flavor and color to baked goods. I’ve seen them mixed into frostings with great results, so I tried folding powdered freeze-dried strawberry into the marshmallow-and-butter base of classic Rice Krispie treats. The strawberry flavor is bright and true, and the pink hue is perfect for celebrations.

To prepare the strawberries, crush them by hand or pulse them briefly in a food processor until you have a fine powder. You can substitute other freeze-dried fruits — raspberries or blueberries work well — but be sure to use freeze-dried rather than dehydrated fruit for the best texture and color.

Add the powdered freeze-dried strawberries to the butter and marshmallows when the marshmallows are nearly melted. The color develops quickly and kids love watching the mixture change. Once combined, fold in the cereal and press the mixture into a prepared pan.

You can cut the treats into squares or use a heart-shaped cutter for festive shapes. For a kid-friendly twist, insert a popsicle stick into each treat and let children decorate with frosting and sprinkles.

Strawberry Rice Krispie Treats


Description

These Strawberry Rice Krispie Treats are delicious — the strawberry flavor is vivid and the pink color makes them perfect for Valentine’s Day or any special occasion.


Ingredients

  • 1.2 ounces freeze-dried strawberries
  • 5 tablespoons butter
  • 12-ounce bag marshmallows
  • 6 cups Rice Krispies cereal

Instructions

  1. Crush the freeze-dried strawberries into a fine powder by hand or in a food processor. Set aside.
  2. Prepare a 9×13-inch pan by spraying with nonstick spray or coating with softened butter.
  3. In a large pan, melt the butter over medium heat. Add the marshmallows and stir until they’re almost completely melted.
  4. Stir in the powdered freeze-dried strawberries until fully incorporated and the mixture is evenly colored.
  5. Remove the pan from the heat and fold in the Rice Krispies cereal until combined.
  6. Press the mixture evenly into the prepared pan and allow it to cool.
  7. Once set, cut into squares or use a cookie cutter for shaped treats. Store covered until serving.
