How To Make Vegan Soul Cakes

Step 1: Combine the plain flour, baking powder and spices in a large bowl. Rub in the cold, diced vegan block butter with your fingertips until the mix resembles fine breadcrumbs.

Step 2: Stir in the sugar and currants so they are evenly distributed through the crumbly mixture.

Step 3: Mix the non-dairy milk with the vinegar, then add to the dry ingredients and bring together into a soft dough. Using your hands is often easiest at this stage.

Step 4: On a lightly floured surface, roll the dough to about 6–8 mm (¼ in) thickness. Use a 6–7 cm (2½ in) round cutter to cut out as many rounds as possible. Re-roll scraps to make more.

Step 5: Arrange the rounds on lined baking sheets with space between them. Use a toothpick or the back of a knife to press a deep cross into the top of each cake—deep enough to be visible but not cut all the way through.

Step 6: Bake at 180℃/160℃ fan (350℉/gas mark 4) for 20–25 minutes until golden. Shorter baking yields a softer cake; longer baking gives a crisper texture.

For consistent baking results, use metric measurements and a digital scale—the precision yields better and more repeatable texture than cup measurements. Avoid overworking the dough to prevent gluten development and chewiness; mix only until combined.
