- 1 cup granulated white sugar
- 1 cup packed brown sugar

- ½ teaspoon baking powder
- 1 teaspoon salt
- 2 cups Rice Krispies
- 2 cups oats
- 1 cup shredded sweetened coconut
- 2 cups chocolate chips
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, use an electric mixer to combine shortening and both sugars. Mix in the eggs and vanilla until smooth.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet mixture and mix until combined.
- Stir in the Rice Krispies, oats, coconut, and chocolate chips until evenly incorporated.
- Scoop tablespoon-sized portions of dough and shape into rounds. Place on greased or parchment-lined cookie sheets. If desired, press a few extra chocolate chips onto the top of each cookie. Bake 8 to 10 minutes, or until cooked through. Cool on a wire rack.
