Bourbon Candied Pecans with Sweet & Spicy Glaze

Sweet and Spicy Candied Bourbon Pecans are salty, sweet, and just a touch spicy. The bourbon flavor is subtle but adds the perfect depth to make these pecans irresistible.

This bourbon candied pecans recipe is one of my favorites — simple, addictive, and perfect as a snack or appetizer. We often serve them at Thanksgiving and Christmas alongside deviled eggs, bacon jam, or pimento cheese, but they’re wonderful any time of year.

The pecans bake with a thin crunchy sugar shell and remain tender inside, with a gentle heat from cayenne. Even if you don’t usually eat pecans, give these a try — they might convert you.

When I pulled them from the oven I tasted one, ran outside to show my husband, and he said, “Oh… those are tasty. Like really, really tasty.”

Ingredients

  • 1 tablespoon Bourbon
  • 1 egg white
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • ½ teaspoon kosher salt
  • ⅛ – ¼ teaspoon cayenne pepper
  • 3 cups pecan halves

Instructions

  • Preheat oven to 350°F. Remove any items you store in the oven so it reaches temperature evenly.
  • In a medium bowl whisk together bourbon, vanilla, and egg white until slightly frothy.
  • Add pecans and toss to coat completely with the egg-bourbon mixture.
  • In a separate bowl combine brown sugar, cayenne, and salt.
  • Toss the sugar mixture with the coated pecans until evenly covered.
  • Spread the pecans in a single layer on a baking sheet lined with parchment or a non-stick mat.
  • Important: lower the oven temperature to 250°F, then bake the pecans for 10 minutes.
  • Stir and spread them again, then bake 10 more minutes.
  • Stir once more and bake an additional 10 minutes for a total of 30 minutes. The coating will go from sticky to crystallized and crunchy.
  • Cool on the baking sheet so the sugar shell hardens. Serve immediately or store in an airtight container.

Notes

How to Store Candied Bourbon Pecans

Keep cooled pecans in an airtight jar or container at room temperature up to two weeks. They’re best within the first few days.

Helpful Tips

  • Follow the oven temperatures exactly. Too much heat can burn the bourbon-sugar coating.
  • Use raw (unroasted, unsalted) nuts if substituting — pre-roasted or salted nuts will overcook or become too salty.
  • If you enjoy heat, use the full 1/4 teaspoon cayenne. For a smoky twist, substitute chipotle powder.

Special Equipment Needed

  • Mixing bowl
  • Baking sheet
  • Parchment paper or non-stick baking mat

Can You Use a Different Kind of Nuts in Place of Pecans?

Yes. Use raw, unroasted, unsalted nuts intended for baking. Whole nuts are best — slivered or chopped pieces can burn more easily. Almonds, cashews, walnuts, macadamia nuts, or peanuts all work well.

How to Make Bourbon Candied Pecans

This recipe is straightforward and forgiving. The key is coating the pecans well and baking slowly so the sugar crystallizes without burning.

Preheat oven to 350°F and clear the oven so it heats evenly. Whisk bourbon, vanilla, and egg white until slightly frothy. Stir in pecans until fully coated. Mix brown sugar, cayenne, and salt in a separate bowl, then toss with the coated pecans so the sugar adheres well. Spread the pecans in a single layer on parchment-lined or non-stick baking sheet (they’re sticky).

IMPORTANT Recipe Tip

After coating, reduce the oven to 250°F and bake the pecans for 10 minutes. Stir and bake two more 10-minute intervals for a total of 30 minutes. Slow, low heat prevents burning and lets the coating crystallize.

Frequently Asked Questions

Can you replace the bourbon with something non-alcoholic?

Yes. Substitute apple juice or apple cider for a similar depth without alcohol. Water, orange juice, or a little maple syrup are other options to experiment with.

Can you make Keto Candied Pecans with this recipe?

Yes. Swap the brown sugar for a granular low-carb sweetener (like erythritol), and replace bourbon with water or sugar-free juice. Watch closely, as sugar substitutes can brown or burn faster.
