Creamy Fettuccine Alfredo: Classic Homemade Recipe

Fettuccine Alfredo is a classic pasta dish made with fettuccine tossed in a rich cheese sauce of Parmesan and butter in its traditional form, similar in comfort to pasta alla carbonara. Since its introduction in the United States many variations have emerged, sometimes adding ingredients such as eggs, flour, olive oil, or Asiago cheese to alter the flavor and increase richness.

This recipe is inspired by Olive Garden’s Alfredo and focuses on delivering a creamy, flavorful sauce without using butter. Instead, milk, cream, and a blend of cheeses create a velvety texture. I’ve added crumbled bacon for extra savory depth; prosciutto can be used instead if you prefer.

Ingredients

  • 1 lb fettuccine cooked according to package instructions
  • 1 1/2 cup milk
  • 1 1/2 cup heavy whipping cream
  • 1/2 cup Parmesan cheese shredded
  • 1/2 cup Romano cheese shredded
  • 6 egg yolks
  • 4 pieces fried bacon crumbled (optional)
  • Salt and pepper to taste

Instructions

  • Cook the fettuccine according to package instructions; drain and set aside.
  • In a saucepan, bring the milk to a gentle boil over medium heat.
  • Add the heavy whipping cream, stir, and allow the mixture to come to a light boil.
  • Reduce heat to low, then add the Parmesan and Romano cheeses. Stir constantly until the cheeses melt and the sauce is smooth.
  • Whisk the egg yolks in a bowl. Temper the yolks by adding about 5 tablespoons of the hot milk-cheese mixture while whisking, then combine thoroughly.
  • Pour the tempered egg yolk mixture back into the saucepan and stir over low heat until the sauce thickens slightly. Do not boil to avoid curdling.
  • Add the cooked fettuccine to the sauce and toss until the noodles are evenly coated.
  • Stir in the crumbled bacon, then season with salt and pepper to taste.
  • Transfer to a serving plate and serve immediately. Enjoy!
