This Italian-style stir fry comes together quickly and easily—perfect for weeknights when you want a healthy dinner on the table fast.
Lately several of my blogging friends have been welcoming babies, and I couldn’t be happier for them. Today I’m celebrating my friend Katie and her soon-to-be baby boy. Katie lives in Central Florida like I do, and I’ve been lucky enough to spend time with her. She’s kind, talented, and I’m excited to meet her little one soon.
With new parents short on time and energy, simple, healthy meals become essential. This Italian-style stir fry is one of those go-to dinners I assemble when I want something quick that the whole family will enjoy. It comes together in minutes and pairs well with brown rice, quinoa, or whole wheat orzo for a satisfying weeknight meal.

I like to keep pre-cooked chicken sausages in the fridge or freezer for recipes like this. They’re convenient, come in a variety of flavors, and make dinner prep fast. For this stir fry I used pre-cooked Italian chicken sausage, sliced into bite-sized pieces, then sautéed briefly with fresh vegetables and simple seasonings.

Italian Style Stir Fry
Yield: 4-5 servings

Ingredients:
- 1 package pre-cooked Italian chicken sausage (4–5 links), cut into 1″ pieces
- 2 tablespoons olive oil, divided
- 2 garlic cloves, minced
- 2 cups fresh broccoli florets
- 1 large bell pepper (or 6 mini sweet peppers), thinly sliced
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
Directions:
- Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add the chicken sausage pieces and brown on both sides, about 5–6 minutes. Remove the sausage and set aside.
- Add the remaining tablespoon of olive oil to the same skillet and raise the heat to medium-high. Add the minced garlic, broccoli, and sliced peppers. Sauté for 3–4 minutes until the vegetables are bright and slightly crisp. Season with oregano, salt, and pepper.
- Return the sausage to the pan and gently toss to combine. Cook for another 1–2 minutes to heat through.
- Serve the stir fry over brown rice, quinoa, or whole wheat orzo. Finish with a drizzle of olive oil and a sprinkle of Parmesan if desired.
