This Mediterranean quinoa salad quickly became one of my favorites because I love Mediterranean ingredients: tangy feta, ripe tomatoes, briny olives and fresh herbs. This recipe was inspired by my love of vegan feta. I adore feta for its tangy, crumbly texture and bold flavor, and pairing it with quinoa felt like a natural fit. The salad balances sweet, tart and salty notes and offers a satisfying mix of textures in every bite.

Ingredients

  • 3 cups cooked quinoa
  • 1/3 cup cucumbers, diced
  • 1/3 cup olives, sliced
  • 1/3 cup vegan feta, crumbled
  • 2 tomatoes, diced
  • 2 teaspoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • ½ lime, for squeezing

Instructions

  1. Combine the cooked quinoa, cucumbers, olives, vegan feta, tomatoes and parsley in a large bowl. Drizzle with olive oil and toss to combine. I like to serve this warm right after the quinoa is cooked, but it can be enjoyed chilled.
  2. To reheat, microwave for about 1 minute or until warmed to your liking.
  3. Squeeze the lime over the salad just before serving and toss gently to distribute the citrus.

Notes

This salad is very flexible: increase or reduce any ingredient to suit your taste. Add bell pepper, red onion, fresh mint, or a handful of toasted pine nuts for extra texture.
