EASY MEXICAN NOODLE CASSEROLE
Noodle casseroles are one of those comforting family dishes that bring back warm memories. This recipe gives the classic a Mexican-inspired twist using No Yolks Broad Noodles, lean ground turkey, colorful vegetables, taco seasoning and melted cheddar.
The casserole comes together quickly and makes excellent leftovers for busy weeknights or packed lunches. If you prefer, swap the turkey for ground beef or make it vegetarian by omitting the meat and adding black beans, bell peppers or extra veggies. Top with avocado, tomatoes, red onion and cilantro for a fresh finish.

No Yolks Broad Noodles are my go-to for this type of dish because they stay firm and fluffy in casseroles and soups. I often keep a bag in the pantry for quick meals and use them in everything from chicken noodle soups to tuna noodle casseroles. Their egg-white base means no cholesterol and lower fat and sodium compared to traditional egg noodles.
They’re versatile: try them in miso soup, french onion soup, a walnut pesto with kale, or a spicy sriracha-cheesy noodle dish to mix things up.

How to make it

Preheat the oven to 350°F. Cook 6 oz. of No Yolks Noodles according to the package directions. While the noodles cook, heat 2 tablespoons olive oil in a large skillet over medium heat. Add 1/4 sweet onion (chopped) and sauté for about 2 minutes. Add 2 cloves minced garlic and cook for another 2 minutes.
Add 1 lb. ground turkey and 1 chopped jalapeño (seeds removed, optional). Cook until the turkey is browned and cooked through. Stir in the cooked noodles, 2 tablespoons taco seasoning, 1 cup canned sweet corn (drained or use fresh/frozen), 1 cup diced tomatoes (drained), 1 cup salsa (use your favorite), and 1/2 cup of the shredded cheese. Mix everything until combined.
Spray a large oven-safe casserole dish with non-stick spray. Pour the noodle mixture into the dish and spread evenly. Top with the remaining 1 cup sharp cheddar cheese and 2 tablespoons chopped cilantro.

Bake for 20 minutes, or until the cheese is bubbling and golden. Remove from the oven and garnish with red onion, cherry tomatoes, cilantro, green onion and sliced avocado as desired. Store leftovers in an airtight container for up to 5 days.

Notes
- Ground turkey can be swapped for ground beef or omitted for a vegetarian version. Add beans or extra vegetables to boost volume and nutrients.
