Creating a Fantasy Chocolate Bug: Week Two of the Pastry Course

Last week we focused on understanding concave and convex shapes and began preparing work for our final showpiece. Some students started pieces for the final assignment, while others designed imaginative items. I chose to design a fantasy chocolate bug.

This week went much more smoothly. Forming the shapes was straightforward, and I even tempered and colored chocolate for the first time. We practiced techniques to make chocolates and pralines glossier by applying a thin coating inside the molds. That extra layer enhances shine and gives a professional finish.

Coloring chocolate proved to be challenging; achieving exactly the shade you want takes patience and repetition. I discovered that small adjustments and repeated trials improve consistency. With each attempt my technique improved, so I’m confident that continued practice will yield the results I’m aiming for.

In addition to coloring and molding, we practiced finishing touches that elevate confections from homemade to bakery-quality. Learning to coat molds thinly, control temperature, and apply colors with restraint helps preserve the chocolate’s texture and shine. Attention to those details is essential for any polished showpiece.

Next week’s lesson will focus entirely on the final assignment: the showpiece. I’m both excited and a little nervous, but after the progress made this week I feel better prepared. The skills practiced so far—shape creation, tempering, coloring, and finishing—will all be important when building a larger, cohesive piece. I plan to apply these techniques and continue refining my approach as I work toward the final project.

Overall, the second week was encouraging. Progress came quickly with focused practice, and I walked away with a new appreciation for the precision and patience required in chocolate work. I look forward to continuing to refine my technique and seeing how the showpiece comes together.
