How to Make Crispy Bacon Pancake Dippers

These dippers are straightforward to make, and you can prepare the bacon ahead of time. If you prefer a shortcut, pre-cooked bacon works too. The key is a slightly thicker pancake batter and using just enough batter to coat each bacon strip.

Once your bacon is crispy, mix a batter that’s thicker than standard pancake batter. Scoop a small portion — just enough to cover the bacon slice — and cook on a medium-low griddle. Cooking at this temperature helps the pancake cook through without burning the outside.

Flip the dippers the same way you would a regular pancake, and cook until both sides are golden brown. The result is a soft, fluffy pancake wrapped around a crisp piece of bacon — ideal for dipping.

Description

Bacon Pancake Dippers combine crispy bacon with a fluffy pancake for a simple, delicious handheld breakfast. They’re great for family brunches, quick breakfasts, or anytime you want a fun twist on pancakes and bacon.

Ingredients

  • 1 pound bacon
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon kosher salt
  • 3 tablespoons dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1½ cups milk
  • 5 tablespoons butter, melted

Instructions

  1. Preheat oven to 400°F. Line a large, rimmed baking sheet with aluminum foil. Lay the bacon slices on the sheet, leaving space between them; the bacon will shrink as it cooks.
  2. Bake the bacon for 15–20 minutes or until crisp. Transfer bacon to a paper towel–lined plate to drain excess grease and set aside.
  3. In a large bowl, whisk together the flour, baking powder, salt, and brown sugar.
  4. In a separate bowl, whisk the eggs, vanilla, and milk until combined.
  5. Stir the wet ingredients into the dry until just combined. Mix in the melted butter; the batter should be slightly lumpy. Let the batter rest while you heat a griddle to medium-low.
  6. Place a slice of bacon on the hot griddle. Scoop about 1/4 cup of pancake batter and pour it over the bacon to cover.
  7. Cook until the edges are set and bubbles form on top, then flip and cook until both sides are golden brown.
  8. Serve warm with maple syrup for dipping.
