Ingredients

- 4 tilapia fillets

For the vegetables:
- 1 zucchini, cut into large chunks
- 1 yellow squash, cut into large chunks
- 1 heirloom tomato, diced
- 1/2 cup (120 ml) red pepper, diced
- 1/2 cup (120 ml) sweet onion, diced
- 1/2 cup (120 ml) freshly grated Parmesan cheese
- 1 tbsp (15 ml) olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions
For the fish:
- Arrange tilapia fillets in an oven-safe baking dish.
- Whisk together the olive oil, minced garlic, parsley and a pinch of pepper; pour over the fish to coat.
- Preheat the broiler and let the coated fillets sit for 5 minutes to absorb the marinade.
- Broil about 6–8 inches from the heat source for 3 minutes per side, or until the fish flakes easily and is opaque through.
For the vegetables:
- Preheat the oven to 450°F (230°C).
- Place the zucchini, yellow squash, tomato, red pepper and sweet onion in a large oven-safe dish.
- Toss the vegetables with the grated Parmesan, olive oil, minced garlic, salt and pepper until evenly coated.
- Roast for about 25 minutes, stirring once if desired, until the vegetables are tender and the Parmesan is golden and slightly crisp.
