Ingredients

For the fish marinade:

  • 4 tilapia fillets
  • 1 tbsp (15 ml) olive oil
  • 1 clove garlic, minced
  • 1 tsp parsley
  • Freshly ground black pepper, to taste

For the vegetables:

  • 1 zucchini, cut into large chunks
  • 1 yellow squash, cut into large chunks
  • 1 heirloom tomato, diced
  • 1/2 cup (120 ml) red pepper, diced
  • 1/2 cup (120 ml) sweet onion, diced
  • 1/2 cup (120 ml) freshly grated Parmesan cheese
  • 1 tbsp (15 ml) olive oil
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

For the fish:

  1. Arrange tilapia fillets in an oven-safe baking dish.
  2. Whisk together the olive oil, minced garlic, parsley and a pinch of pepper; pour over the fish to coat.
  3. Preheat the broiler and let the coated fillets sit for 5 minutes to absorb the marinade.
  4. Broil about 6–8 inches from the heat source for 3 minutes per side, or until the fish flakes easily and is opaque through.

For the vegetables:

  1. Preheat the oven to 450°F (230°C).
  2. Place the zucchini, yellow squash, tomato, red pepper and sweet onion in a large oven-safe dish.
  3. Toss the vegetables with the grated Parmesan, olive oil, minced garlic, salt and pepper until evenly coated.
  4. Roast for about 25 minutes, stirring once if desired, until the vegetables are tender and the Parmesan is golden and slightly crisp.
